Wholesome Dark Chocolate Brownies

Ingredients:

180 mL macadamia oil
200g good quality dark chocolate (preferably raw or organic)
200g unrefined sugar (ie. rapadura)
3 eggs
1 tsp vanilla extract
100g almond meal
100g quinoa flour
25g cacao powder
1 tsp baking powder, gluten free

Variations:

*1/2 cup chopped dates
*1/2 cup chopped, roasted nuts
*2 tbs goji berries & 1/4 cup desiccated coconut
*make up your own!

 

How To:

Preheat the oven to 170 degrees and line your baking dish(es) with baking paper.

Place the macadamia oil, chocolate and sugar in a heatproof bowl above a saucepan of simmering water. Stir until the ingredients are melted and combined. Set aside to cool for 10 minutes. Whisk the eggs into the chocolate mixture, followed by the vanilla. Fold in the flours and baking powder.

To make the variations, divide the batter into three and add the ingredients listed. Spoon the batter into the baking dishes and bake for about 30 minutes or until the brownies look set and a skewer inserted into the centre comes out almost clean. You want the brownie to be moist and rich, so make sure you take it out of the oven when there are still a few moist crumbs on the skewer!

Note: if you are using dried fruit in your brownie make sure you mixed it through the batter really well!
